From Basil to Jar: Atlante’s Expertise Behind Sainsbury’s Pesto Range

Atlante UK is proud to work with Sainsbury’s as a trusted supply partner across the retailer’s own-label pesto range.

Our partnership reflects the knowledge, experience, and supply-chain relationships Atlante has developed within the pesto category over many years.

From understanding the basil crop and developing balanced recipes to overseeing production and delivery, we manage every stage with one objective: to deliver consistent quality from one jar to the next.

Pesto expertise starts with the ingredients

Pesto may appear to be a simple product, but achieving the right balance of flavour, texture, colour, and shelf life requires considerable expertise.

Basil is a particularly delicate raw material. Its aromatic profile and appearance can be influenced by its variety, growing conditions, maturity at harvest and handling after picking. The basil must then be balanced with oils, cheeses, nuts and seasoning to create a recipe that performs consistently at scale.

Different styles of pesto also present different considerations. A classic green pesto must retain the recognisable freshness and character of basil, while red and vegetable-based recipes require their own balance of sweetness, acidity, texture, and savoury flavour.
Atlante’s understanding of these interactions allows us to work with retailers and production partners to develop recipes that deliver on taste, quality, value and technical requirements.

What 2026 tells us about pesto quality

Weather naturally plays an important role in every basil season, influencing how the crop grows and the characteristics of the harvested leaves. However, warmer, or sunnier conditions alone do not guarantee better tasting pesto.

Quality depends on the complete journey of the ingredient: how the crop is managed, when it is harvested, how quickly it is handled and how the production process responds to natural variation.

A scientific review published in August 2026 reinforced this field-to-fork approach. It found that cultivation, post-harvest handling and processing all contribute to the colour, aroma, consistency, shelf life and overall quality of industrially produced pesto.

This is particularly relevant when developing pesto at retail scale. Basil is an agricultural ingredient and will naturally vary between seasons and batches. Strong crop knowledge, careful sourcing and ongoing quality monitoring help manage that variation and maintain a consistent finished product throughout the year.

The wider basil sector also celebrated an important milestone in 2026, marking 20 years of the Consortium for the Protection of Basilico Genovese DOP. Although DOP certification relates specifically to qualifying basil grown in Liguria, the anniversary highlights the heritage, specialist knowledge and increasingly structured supply chain surrounding pesto’s defining ingredient.

The detail behind every jar

Once the ingredients and recipe have been agreed, the production and filling process introduces another layer of complexity.

Basil naturally reacts to oxygen and heat, which can affect its aroma and colour. The process must therefore protect the character of the recipe while meeting the food-safety and shelf-life requirements of an ambient retail product.

Fill weight, temperature, headspace, and seal integrity all need to be carefully controlled. The heat treatment must also be validated for the individual recipe, as differences in ingredients, acidity and texture can change how a product behaves during production and storage.

Atlante works alongside its production, quality, and technical partners to oversee these details, from recipe validation and factory standards to packaging and finished-product checks.

Our involvement continues beyond production. We also coordinate forecasting, stock management and logistics between Italy and the UK, helping to maintain availability and consistent service for Sainsbury’s.

Experience across the pesto category

Pesto has developed far beyond its traditional role as a pasta sauce. It is now used in sandwiches, salads, pizzas, traybakes, marinades and dressings, making it one of the most versatile products in the cupboard.

This versatility creates opportunities for innovation, but it also requires a clear understanding of what customers expect from each recipe. Flavour, texture, convenience, and value must all work together.

Atlante combines this market understanding with technical and supply-chain expertise, allowing us to support established favourites as well as new recipes and changing customer tastes.

Our partnership with Sainsbury’s

Our work with Sainsbury’s demonstrates how Atlante supports complex private-label projects through long-term knowledge and collaboration.

Our role is not simply to supply a finished product. We connect market insight, ingredient knowledge, recipe development, technical requirements, and supply-chain management to create a complete solution for our retail partners.

We are proud to support Sainsbury’s pesto range and to continue building on the expertise and collaboration behind the partnership.
